The Academy of Chocolate convenes during Chocolate Week

The 2012 Academy of Chocolate conference is almost upon us; coming at the end of Chocolate Week it looks set to be another fascinating day. The event is aimed at all levels of knowledge, whether you already have a chocolate business, are starting a chocolate company or are interested in learning more about the industry.
Pretty much anyone who is anybody in the UK chocolate world, and a number of global names will gather for the day, including Mott Green, Chantal Coady, William Curley, Paul A Young, Tony Lass MBE (formerly head of research on cocoa at Cadbury, Craig Sams (Green & Blacks) and Sara Jayne Staines.
Some of the most pressing topics in the world of chocolate at present will be covered including sustainability, cacao genetics, cocoa as a commodity plus many more and chocolate tastings will take place throughout.
